There are many different types of honey, how do bee keepers control where the bees get their pollen?

Clover honey seems to be the most common, but I was at the health food store today and the had Wildflower honey and a couple of other kinds.

Beekeeper move their hives from area to area. Certain plants bloom at different times. If the bees are placed in Orange orchards during blossom time the honey can be called orange blossom honey.

When I was a kid, there were more types of honey. However, labeling requirements became more strict, now, instead of several honeys named for different plants growing in the desert ( agave and mesquite) it is all called "desert honey."
Reply:If you have a honey comb in a wheat field, you can conclude that most of the honey comes from wheat flowers, etc.
